This case study explores how a naturally occurring orange cauliflower led scientists to investigate the Or gene, which increases beta-carotene and improves the vegetable’s nutritional value. By going off of this accidental discovery to modern genetic modification, the case explores how bioengineered cauliflower could address Vitamin A deficiencies, support farmers through improved resilience, and reduce environmental impacts. It also looks at the bigger questions like, public mistrust, ethical concerns, and who actually gets access to GM foods.
